Flower sprouts - pan cooked with shallots and sage

A modern twist on a comfort dish. Big flavours in this accompaniment recipe. Try this with bangers and mash for a new winter seasonal pleasure.

Ingredients

160g flower sprouts
8 shallots, peeled and cut into quarters
Knob of butter
500ml vegetable stock
Small bunch of fresh sage
Black pepper

Instructions

  1. In a large frying pan melt the butter and brown the shallots on both sides.
  2. Add the sprouts then turn down the heat. Pour int he stock and braise the vegetables for 3-4 minutes until the veg are tender and the stock has reduced slightly.
  3. Serve in the braising liquor sprinkled with the sage and a grind of black pepper.
