Thai celeriac and peanut salad

A really unusual, crunchy Thai-style dish that's easy to make and susprisingly more-ish. Great as an alternative salad dish with a barbecue or buffet-style meal.


1 celeriac, peeled and cut into chunky batons
1 jar of peanut butter (crunchy or smooth to suit your preference)
300ml sunflower or vegetable oil
2-4 tbsps sweet Thai chilli dipping sauce
1 handful of fresh coriander or fresh lime leaf
Good dash of Thai fish sauce (optional)
Good dash of lime or lemon juice
Black pepper
Dash of soy 


Quickly blanch the celeriac in boiling water with a dash of vinegar.

Warm the peanut butter and oil together very gently in the microwave to soften.

Beat together the oil and peanut butter mixture. If it's still too thick, add some more oil.

Mix in the other ingredients into the sauce, drain the celeriac and mix it into the sauce.
