Indian Kale Stir Fry

Delicious, nutritious and easy to cook, the only surprise is that it has taken so long for kale to catch on. Kale, sometimes known as curly kale complements a wide variety of food and its flavour profile means that it works well with stronger dishes such as game or with spicy dishes like this stir fry.


200g curly kale, sliced
50g butter or ghee
2 tsp ground coriander
2 tsp ground cumin
Salt and freshly ground black pepper


1: Blanch the kale in boiling, salted water for 1-2 minutes. Drain.

2: Melt the butter in a large frying pan and fry the spices for 1 minute. Add the kale and stir fry for 1-2 minutes. Season to taste.
