Leek Salad with Mint Dressing

Because baby leeks are so tender they are ideal served as a salad and the freshness of the mint gives a really summery feel to this dish.


350g baby leeks, trimmed and washed
2 tbsp extra virgin olive oil (25g)
1 tbsp white wine vinegar (12g)
10 fresh mint leaves, chopped
Salt and freshly ground black pepper


1.Blanch the baby leeks in boiling water for 1-2 minutes until just tender. Drain and refresh under cold water.

2. Mix the remaining ingredients together in a small bowl and pour over the baby leeks. Allow to marinate for 5 minutes.
