Beans in Citrus Butter
Also known as helda beans, flat beans are similar to the well-known runner bean but are stringless with a smooth skin. This recipe works just as well though, with all green beans, the lime zest really brings out the flavour of the beans and is delicious served with fish.
1: Cook the beans in boiling, salted water for 3-4 minutes until just tender and drain.
2: Melt the butter in a saucepan and add the lime zest and juice. Cook gently for 1-2 minutes. Add the parsley and beans and season to taste.
