Salad of Broad Beans with Sun-Blushed Tomatoes and Feta Cheese
A deliciously simple salad that has a real taste of summer. Fresh broad beans are very tender and so take only moments to cook and it is really a matter of personal preference whether or not you peel them.
400g fresh broad beans*
100g sun-blushed tomatoes*, drained of oil and roughly chopped
1 tbsp of French or Italian salad dressing
100g Feta cheese, crumbled or roughly chopped
Salt and freshly ground pepper to taste
