Purple Sprouting Broccoli in Lemon Pasta

This dish is full of spring flavours. If purple sprouting broccoli is not available replace with traditional broccoli.


150g penne pasta
200g purple sprouting broccoli cut into 5cm pieces
1 tbsp olive oil
2 cloves garlic, chopped
Zest and juice of ½ lemon
2 tbsp white wine
100ml double cream
Salt and black pepper


Bring a large pan of seasoned water to a rolling boil. Add the pasta and boil for 10 minutes or according to pack instructions. Drain and return to the pan.

Bring another small pan of water to the boil, add the broccoli and simmer for 2 minutes. Drain and add to the pasta.

Heat the olive oil in a frying pan. Add the garlic and lemon zest and cook for 1 minute until soft, but not coloured. Add the white wine and lemon juice and reduce by half. Stir in the cream and seasoning and bring to the boil.

Add the cream mixture to the broccoli and pasta and toss until well mixed.

Serve with a generous sprinkling of black pepper.
