Mange Tout, Orange and Sesame Stir-Fry
The vegetables in this dish could be adapted to include carrots, peppers, green beans or courgettes. Remember when stir-frying, never be tempted to add more oil. If the vegetables start sticking to pan add a few tablespoons of water. This will steam the vegetables and retain the crunchiness.
Heat the oil in a wok or large frying pan. Add the ginger and cook for 1 minute.
Add the cabbage and stir-fry for 2 minutes. Add the mange tout and sugar snaps and stir-fry for 3 minutes.
Peel and segment 1 orange.
Add the sesame seeds, soy sauce, the juice from the remaining orange and the orange segments. Stir-fry for a further 2 minutes. The vegetables should be still crunchy.
Serve immediately along side noodles.
