Fine Beans with Gremolata

Gremolata is a delicious mix of lemon, parsley and garlic which, in this recipe is sprinkled over the beans once they have been cooked and drained. The steam from the freshly cooked beans brings out the aroma of the gremolata turning these beans into a tangy vegetable dish. Try using these beans as a bed of vegetables on which to serve grilled salmon. The lemon zest may be substituted with lime zest for a more tangy flavour.


grated zest ½ unwaxed lemon
1 tbsp finely chopped fresh parsley
1 clove garlic, peeled and crushed
150g fine beans, top and tailed
1 tsp olive oil


In a small bowl, combine the gremolata ingredients.

Bring a pan of lightly salted water to the boil and add the fine beans. Cook for 4-5 minutes until al dente. Drain well and place in a small warmed vegetable dish.

Sprinkle the gremolata over the beans, drizzle with the olive oil and serve immediately.
