Flash-fried Beans with Ginger

Dwarf beans are also often called French or round beans. Stir-fried in a hot wok, they take just 2-3minutes to cook. The beans should have a hot, sweet sour flavour that makes then ideal to serve with any Thai or Chinese dishes.

Ingredients

1 tbsp olive oil
2cm fresh ginger, peeled and finely shredded
About ½ tsp finely chopped red chilli
175g dwarf beans, trimmed and halved
Squeeze of fresh lime juice, about 2-3 tsp
Pinch light muscovado sugar
1 tbsp chopped fresh coriander

Instructions

Heat the oil in a wok or large frying pan. Add the ginger and chilli and stir-fry for 1 minute.
Add the dwarf beans and stir-fry over a brisk heat for 2-3 minutes or until the beans are tender but still retain a crunch. Add the lime juice, the sugar and coriander and taste for seasoning. Add a little more lime or sugar to taste. Serve immediately.

Tips:
Try using French beans or strips of courgette.

Add a teaspoonful of toasted sesame seeds before serving the beans.

Cook about 125g raw prawns with the ginger and chilli before adding the beans. It makes a great light lunch or supper.
