Sungold Tomato, Spinach and Feta Salad

A deliciously tangy salad with creamy feta and the crunch of pine nuts. This salad makes a quick and easy light lunch or a salad to accompany chicken. Try adding crispy bacon lardons for extra flavour and texture. If you wish, you can replace the dressing with a herb flavoured dressing of your choice.

Ingredients

25g pine nuts (optional)
100g baby leaf spinach, washed and drained
200g feta cheese, cubed
100g Sungold tomatoes, halved
1 tbspolive oil
1 tbspsherry vinegar

Instructions

1. Dry fry the pine nuts for 1-2 minutes until lightly golden.

2. Place the spinach in a bowl with the feta cheese, tomatoes and pine nuts if using.

3. Sprinkle with the sherry vinegar and drizzle with the olive oil. Season and toss gently to combine. Serve with crispy baguette.
