Whole Roasted Baby Courgettes with Greek Yoghurt

This dish is Eastern European in origin. In Albania it is often served as a mezze or appetizer


12 baby courgettes, halved lengthways
1 tbsp olive oil
½ red onion, finely diced
1 garlic clove, finely chopped
250g Greek-style yoghurt
1 tbsp fresh chopped mint
Freshly ground black pepper


1. Preheat the oven to 200oC, gas mark 6.

2. Sprinkle the courgettes with a little salt and place on a baking tray in a single layer then coat them with the oil.

3. Cook the courgettes for 15 minutes until tender. Meanwhile, mix together the remaining ingredients. Season to taste before spooning the yoghurt over the warm courgettes.

4. Serve with warmed pitta bread as a perfect light meal or starter.

Cook’s Tip
Try using larger courgettes or summer squashes if the small types are hard to come by.
